PREPARATION
Peel and thinly slice potatoes, then boil in water ( 3 min) and drain. Chop bacon finely and fry until golden, remove from pan and set aside.
In a non-stick frying pan, pour olive oil, when hot, add the potatoes. Add the bacon.
Add whisked eggs, salt and pepper.
Sprinkle the feta cheese and the chopped parsley.
Cook for 3-5 min. then flip over. Serve and sprinkle parmesan cheese.

1 lb of yukon potatoes
3 large eggs
1/4 cup of heavy cream or milk
50 grams of feta cheese
25 grams of smoke bacon
1/8 cup chopped parsley
1 tbs of olive oil
sprinkle parmesan cheese
salt and pepper to taste
