CARLOS FUENMAYOR


Carlos Fuenmayor launched SABROSITO to do what he loves to do best - Latino cooking for small groups of foodies and their friends. A Venezuelan native and Canadian citizen since 1995, Carlos is a graduate of Ottawa's Cordon Bleu Paris Cooking School. He has honed his fine-dining repertoire for over 14 years, most notably as Executive Chef of THE LAURENTIAN ROOM and XANGO, and has also cooked at Sen5es and, in Ottawa, Café Henry Burger and DOMUS.
Since 1999, his focus and culinary passion has been locked on Latino food, which he calls "Cocina de las Americas," pertaining to how the cuisine covers two continents and one subcontinent.   Deciding to pursue this cuisine full time, he formed Sabrosito in 2006, a venture that began auspiciously with a reception for Governor General Michäelle Jean. What makes the cuisine so exciting for Carlos is the fascinating range of influences that have evolved this cuisine. Latino cooking has dipped its spoon into the culinary heritage of Europe, the Caribbean, Asia and Africa.   He gives cooking classes at Great Cooks, Dish and the LCBO, for whom he is featured chef this season.
